{"id":56,"date":"2012-02-04T14:33:00","date_gmt":"2012-02-04T18:33:00","guid":{"rendered":"http:\/\/www.nancyoster.com\/?p=56"},"modified":"2012-02-07T10:56:04","modified_gmt":"2012-02-07T14:56:04","slug":"sea-urchin-scramble","status":"publish","type":"post","link":"https:\/\/www.nancyoster.com\/?p=56","title":{"rendered":"Sea Urchin Scramble"},"content":{"rendered":"<p>We got up early this morning to go to the Fisherman&#8217;s Market to buy some freshly caught fish directly from our local Santa Barbara fishermen.<\/p>\n<p>I bought sea urchin while my husband Dave chose some fish from a fisherman down the row. Urchin diver Stephanie Mutz shared a recipe for scrambled eggs with urchin and we talked about possible variations. I bought two big beautiful live urchins.<\/p>\n<p>When I got home I cleaned the meat out of the urchins. Dave heated some oil with fresh garlic for a quick saute of the urchin pieces.<\/p>\n<p>We had four eggs from my son Shaun&#8217;s backyard chickens, two brown eggs and two blue eggs. I went outside to pick a chili pepper and some kale leaves.<\/p>\n<p><a href=\"http:\/\/4.bp.blogspot.com\/-ScQ9A_b8FVc\/TzASEhGPFlI\/AAAAAAAABv8\/IiAzjJILkcM\/s1600\/KaleChili.jpg\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5706080596691719762\" style=\"display: block; margin: 0px auto 10px; text-align: center; cursor: hand; width: 400px; height: 325px;\" src=\"http:\/\/4.bp.blogspot.com\/-ScQ9A_b8FVc\/TzASEhGPFlI\/AAAAAAAABv8\/IiAzjJILkcM\/s400\/KaleChili.jpg\" alt=\"\" border=\"0\" \/><\/a><br \/>\nI diced a locally grown organic tomato and salted it to draw away some of the juices. After mincing the chili and chopping the kale, I heated the chili in a couple of tablespoons of local olive oil and began to scramble the eggs.<\/p>\n<p><a href=\"http:\/\/3.bp.blogspot.com\/-EviEOl6m6Vc\/TzAS0xRJLEI\/AAAAAAAABwI\/w1YPKasc_Ec\/s1600\/ChiliSaute.jpg\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5706081425666157634\" style=\"display: block; margin: 0px auto 10px; text-align: center; cursor: hand; width: 400px; height: 266px;\" src=\"http:\/\/3.bp.blogspot.com\/-EviEOl6m6Vc\/TzAS0xRJLEI\/AAAAAAAABwI\/w1YPKasc_Ec\/s400\/ChiliSaute.jpg\" alt=\"\" border=\"0\" \/><\/a><br \/>\nI put the urchin pieces into the scramble just as the eggs began to set. When that was hot, I wilted the kale in it.<\/p>\n<p><a href=\"http:\/\/4.bp.blogspot.com\/-ectgDAAiHhM\/TzATwXJ8wyI\/AAAAAAAABwU\/-ZUYIG9rSxg\/s1600\/UrchinScramble.jpg\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5706082449448813346\" style=\"display: block; margin: 0px auto 10px; text-align: center; cursor: hand; width: 400px; height: 266px;\" src=\"http:\/\/4.bp.blogspot.com\/-ectgDAAiHhM\/TzATwXJ8wyI\/AAAAAAAABwU\/-ZUYIG9rSxg\/s400\/UrchinScramble.jpg\" alt=\"\" border=\"0\" \/><\/a><br \/>\nThe diced tomato went into the scramble just before serving. I set aside a few freshly diced tomatoes for garnish.<\/p>\n<p><a href=\"http:\/\/2.bp.blogspot.com\/-vwrZovWY1M8\/TzAU9a7eqrI\/AAAAAAAABwg\/yU6BT2jNAEI\/s1600\/ScramblePlate.jpg\"><img decoding=\"async\" id=\"BLOGGER_PHOTO_ID_5706083773311789746\" style=\"display: block; margin: 0px auto 10px; text-align: center; cursor: hand; width: 377px; height: 400px;\" src=\"http:\/\/2.bp.blogspot.com\/-vwrZovWY1M8\/TzAU9a7eqrI\/AAAAAAAABwg\/yU6BT2jNAEI\/s400\/ScramblePlate.jpg\" alt=\"\" border=\"0\" \/><\/a><\/p>\n<p style=\"text-align: center;\">I topped each serving with freshly grated Parmesan cheese.<\/p>\n<p>Shaun&#8217;s wife Kris wasn&#8217;t sure she&#8217;d like urchin with eggs but changed her mind quickly after tasting this. That&#8217;s a piece of urchin at the middle left.
