For the past few years he has asked me to bake ginger rolls instead of a birthday cake. This is a two-day process that involves making the light buttery brioche dough I learned in <a href=\"http:\/\/cinnamonrollworkshop.blogspot.com\/2008\/01\/dough.html\">Paris<\/a>, then giving the dough a cool rise overnight in the refrigerator.<\/p>\n<p>I also chop a huge amount of fresh ginger to simmer and then I turn that into a filling of candied ginger and syrup.<\/p>\n<p>The next day I roll the dough into long snakes filled with the candied ginger, tie them into knots, and drop each one into a muffin cup partially filled with ginger syrup.<\/p>\n<p><a href=\"http:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/RawGinger.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-227\" title=\"RawGinger\" src=\"http:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/RawGinger.jpg\" alt=\"\" width=\"500\" height=\"449\" srcset=\"https:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/RawGinger.jpg 500w, https:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/RawGinger-300x269.jpg 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a>When that rises to a marshmallowy lightness, I spoon on more syrup and bake. When the baked rolls come out of the oven, I brush on more syrup.<\/p>\n<p><a href=\"http:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/GingerRoll.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-228\" title=\"GingerRoll\" src=\"http:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/GingerRoll.jpg\" alt=\"\" width=\"444\" height=\"500\" srcset=\"https:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/GingerRoll.jpg 444w, https:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/GingerRoll-266x300.jpg 266w\" sizes=\"auto, (max-width: 444px) 100vw, 444px\" \/><\/a>Yeah. It&#8217;s easy to see why Shaun hides all 6 pans of these at the back of the freezer and only shares them with Saraphina (who also chooses them over cake on her birthday).<\/p>\n<p>But yesterday on the way home from school, Saraphina had an idea. &#8220;We could stack the rolls and make them into a cake,&#8221; she said. Brilliant idea. I knew exactly how to do it because when we had our bakery I made cinnamon roll <a href=\"http:\/\/cinnamonrollworkshop.blogspot.com\/2008\/11\/over-top.html\">monkey bread<\/a>.<\/p>\n<p>So we stacked them in a bundt pan with additional syrup between the layers.<\/p>\n<p><a href=\"http:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/BundtRolls.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-229\" title=\"BundtRolls\" src=\"http:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/BundtRolls.jpg\" alt=\"\" width=\"375\" height=\"500\" srcset=\"https:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/BundtRolls.jpg 375w, https:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/BundtRolls-225x300.jpg 225w\" sizes=\"auto, (max-width: 375px) 100vw, 375px\" \/><\/a>Here is the result.<\/p>\n<p><a href=\"http:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/GingerRollCake.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-231\" title=\"GingerRollCake\" src=\"http:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/GingerRollCake.jpg\" alt=\"\" width=\"375\" height=\"500\" srcset=\"https:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/GingerRollCake.jpg 375w, https:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/GingerRollCake-225x300.jpg 225w\" sizes=\"auto, (max-width: 375px) 100vw, 375px\" \/><\/a>Saraphina did the decorating. Then we had a surprise for her\u2014a new litter of <a href=\"http:\/\/starlightmice.blogspot.com\/\">Starlight Mice<\/a> on one of the pans! These are ginger mice, a breed we haven&#8217;t seen before.<\/p>\n<p><a href=\"http:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/GingerMice.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-232\" title=\"GingerMice\" src=\"http:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/GingerMice.jpg\" alt=\"\" width=\"384\" height=\"500\" srcset=\"https:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/GingerMice.jpg 384w, https:\/\/www.nancyoster.com\/wp-content\/uploads\/2013\/12\/GingerMice-230x300.jpg 230w\" sizes=\"auto, (max-width: 384px) 100vw, 384px\" \/><\/a>They crowded onto the plate for the candle lighting and joined in the celebration.
